Beat the Heat with Makguksu

When the summer months start oppressing you, consider beating the heat with a bowl of makguksu. Similar to the more well-known naengmyeon, this is a traditional Korean noodle dish that is served cold. A local specialty of Chuncheon, the capital of the Korean province of Gangwon, makguksu is a popular choice among Koreans throughout the country for hot weather dining.

The word “makguksu” translates into English as “rough noodles”. It gets this name from the fact that it is generally made out of unhulled buckwheat. It is served in a wide variety of fashions, with many restaurants offering customers their own signature versions. In general, it’s a spicy dish, seasoned with the quintessential Korean gochujang red pepper paste. Some versions are made with kimchi or other vegetables, soy sauce, beef, pork, or other ingredients.
