Try a Little Bo-ssam!

If you’re looking for something special at our Bellevue Korean restaurant, consider the unique treat that is bo-ssam. This dish consists of thin slices of pork steamed to perfection and served with a spread of condiments and vegetable leaves. You eat the bo-ssam by wrapping the pork in a leaf of lettuce or kimchi, usually with a dab of ssamjang sauce or other herbal ingredients. The result is something succulent and flavorful, and a popular favorite to Koreans and foreigners alike.

For a long time, Korean housewives would prepare bo-ssam during the tradition of gimjang. This is when a family prepares large amounts of kimchi at the beginning of the cold season. Not only does the dish go well with kimchi leaves, but its high nutrient content makes it ideal for households that are weathering a long, cold winter. Bo-ssam is therefore said to be cooked with familial love, and serves as a symbol of the bond that exists between a housewife and her family.
